Welcome back to our new post. Today we will show a simple, delicious, nutritious and quick dish. We will cook fried green beans with pumpkin seeds and fried tofu. This dish can be served with a brown rice or other grain of you choice. Please let us know in the comments what do you think.
3 cups of cut green beans,
1 cup of pumpkin seeds,
1/2 pound of tofu,
1 Tb sp of sesame oil to fry pumpkin seeds and green beans
1 Tb sp of sesame oil to fry tofu
1 pinch of sea salt,
1 Tb sp of soy sauce,
2 cups of brown rice
You can begin by cooking brown rice. To cook 2 cups of the brown rice you will need 2 and 1/2 cups of water. Bring water to a boil then add washed brown rice. Reduce the heat to a low high. Cook for about 30 minutes or until all water evaporated and rice is soft.
We used cast iron frying pan to fry pumpkin seeds and green beans. This pan is heavy but has a good qualities. Begin with warming up the pan. Reduce heat to medium high, oil it with sesame oil. Then add pumpkin seeds to the pan. Fry pumpkin seeds until golden brown occasionally stirring them. Once seeds turn golden and lightly brown add green beans to the pan. Add pinch of salt. Continue cooking until green beans are soft. You can use a tooth pick to check the softness of the green beans. Stir often to avoid overcooking the portion of the green beans and under cooking other portion. Frying green beans might take up to 10 minutes. Once beans are done turn off the heat and cover them up to keep cooked beans warm.
Now it’s time to fry the tofu. Warm up the frying pan, then add sesame oil and lower the heat to a medium-low. Add tofu to the pan and fry for about 5 minutes. Season with soy sauce. Fry for another 3 minutes then flip tofu and finish frying on other side for 3 minutes.
